Enchiladas Carnitas with Salsa Morita

Rich, crispy carnitas are wrapped in tortillas and covered with our smoky Morita Salsa and topped with cheese and arugula.

INGREDIENTS

  • 1 bag of Mad Mexican Corn Tortillas 
  • 1 Pkg. Mad Mexican Salsa Morita
  • 1 bag of Carnitas de Michoacan
  • 1 cup of 35% cooking cream
  • Sour cream
  • Queso Cotija
  • Arugula
  • Lime juice 
  • Mad Mexican Pasilla oil

INSTRUCTIONS

  • On a pan at medium heat, place carnitas and add 1cup of water and cook for 5 minutes.
  • Add a few drops of Pasilla oil in a separate pan at medium heat and cook tortillas until golden.
  • Fill and roll tortillas with carnitas and arrange on a plate. (we recommend 3 per plate)
  • In a blender, add salsa Morita and 50 ml of water, then warm the salsa for 5 minutes. Separate 1/2 of the salsa, with the remaining portion, add 50 ml of cream or until your preferred spice level is reached. 
  • At the same time, top the tortillas with both salsas on opposite ends of the plate. 
  • Top it off with sour cream, cotija cheese and finally, mix the arugula with lime juice and salt.
