Roasted Lamb with Salsa Morita

Roasted lamb ribs with a sauce that combines the earthy and spicy Salsa Morita, the comforting sweetness of agave honey, and the satisfying crunch of pistachios.

INGREDIENTS

800 Gr Rack of Lamb

250 Gr Pistachios

250 mL Salsa Morita

3 Spoons of Pasilla Oil

2 Spoons of Agave Honey

 

INSTRUCTIONS

  1. First, heat up the pan and add the Pasilla oil.
  2. Roast each side of the lamb until the skin is crispy and golden.
  3. Put the whole container of the Salsa Morita in the blender, along with two spoons of Agave honey.
  4. Then cover the lamb, use only half of the previous mix.
  5. Preheat the oven to 145 F and base for nine minutes.
  6. You can use the remaining portion of the mixture to cover the lamb.
  7. Sprinkle a generous amount of ground pistachios.
  8. Slice and serve with baked potatoes or fresh vegetable salad.
